the low's this week are in the 30's, which means it's officially soup season! we had a fire tonight and enjoyed this delicious french onion soup with gruyere cheese toast and a side salad. aside from a few tears shed while chopping the onions, it's extremely quick and easy to make.
what ya need:
1 stick unsalted butter
3 tablespoons flour
4 onions
3 cloves garlic
5 cups low sodium, organic beef broth
1 cup red wine
2 sprigs thyme
french bread
guyere cheese
olive oil
salt & pepper to taste
in a large pot melt 1 stick of butter. slice the onions, chop the garlic and thyme, and add them to the pot. allow onions, garlic and thyme to cook on medium heat for 25 minutes until soft and caramelized.
once the onions are soft and caramelized, add 1 cup of red wine and bring to a boil. allow onions to soak up red wine for about 5 minutes. then slowly add the 3 tablespoons of flour. sprinkle 1 tablespoon at a time and mix well. reduce to a simmer and allow flour to cook for 10 minutes.
while the red wine and flour are coming together, shred the guyere cheese and slice your french bread. drizzle a little olive oil on top of the sliced bread and sprinkle some cheese on top. place into a 200 degree oven for 12 - 15 minutes or until bubbly and toasted.
add the beef broth and cook on medium heat for another 15 minutes. pour some french onion soup into a bowl and add the guyere cheese toast on top. sprinkle some remaining guyere cheese on top.
